Potato, Cheese and Ham Soup

We tried a new dinner recipe tonight which is a big deal around here. Lately I haven't had much (good) luck with new recipes :(
But! This one actually came out good! I followed the recipe exactly except I added some leftover frozen ham from Christmas. I got this recipe from an eBook I got for free. I made her Potato, Cheddar and Chive soup and it was a hit! Nice and creamy with really good flavor. The best part? I had enough leftover to freeze and add to my freezer stock! I forgot to take pretty pictures, but I did snap one while it was still in the crock pot.

Here is the recipe!
Makes 6 Servings

Ingredients:
  • 4 Large potatoes, peeled and sliced
  • 4 Cups chicken stock
  • 1 Large clove of garlic, minced
  • 1 Cup shredded sharp cheddar cheese
  • 1 Cup smoked Gouda cheese
  • 1/4 Cup chopped fresh chives
  • 1/2 Cup sour cream 
  • Salt and pepper to taste
  • 1 Cup heavy cream
  • 1/4 Cup crumbled sharp cheddar cheese for the garnish
  • I added 2 cups diced ham
Directions:
Place potatoes and 1 cup of the chicken stock in the slow cooker, cover and cook on high for 2 hours. (do the fork test- potatoes should be just barley tender) Spoon out 2/3 of the potatoes and blend them in your blender or food processor with a little of the cooking liquid. add garlic and blend with the potatoes. Return the puree to the slow cooker.
Stir in shredded cheeses, remaining chicken stock, sour cream ( I added diced ham) and chives (save a little for the garnish). Cover and cook on low for 30 minutes. When its done break up the rest of the potatoes with a fork to get your desired consistency. Stir in heavy cream before serving and add salt and pepper to taste!
